1/2 cup parmesan cheese, grated
2 cloves garlic, pressed
2 tablespoons fresh coriander, chopped
1/3 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
1 ½ tablespoons olive oil
20 medium-sized mushrooms, cut off the stems
1/2 cup Gorgonzola cheese, grated
1/4 cup low-fat mayonnaise
1 teaspoon prepared horseradish, well-drained
1 tablespoon fresh parsley, finely chopped


  1. Mix the parmesan cheese together with the garlic, coriander, salt, red pepper,
    and the olive oil; mix to combine well.

    machine. Grill them at 380 degrees F for 8 to 12 minutes or until the stuffing is
    warmed through.
  4. Meanwhile, prepare the horseradish mayo by mixing the mayonnaise,
    horseradish and parsley. Serve with the warm fried mushrooms. Enjoy!
